Superfine Roma Rice 500 g
Salt as required
Extra virgin olive oil 6 tablespoons
White wine vinegar 4 tablespoons
Pepper as required
Black olives 12
Capers 3 tablespoons
Artichokes in oil 6 hearts
Tinned tuna fish 250 gr.
Tinned anchovy fillets 100 gr.

Place
the parboiled rice into plenty of salted water for the time
shown on the packet.
In the meantime prepare the seasoning in a salad bowl and add
tje oil, vinegar, salt and pepper.
When the rice is cooked,drain it while it is still hot, add
the remaining oil, vinegar, salt and pepper.
Add the remaining ingredients to the mixture and mix everything
together well.
